How to erase/cut out objects(foam mats)?
Hello,
I am filming a fight scene where most of the falls are performed onto the foam mats, how can I erase/cut out those mats, and make it look like stuntman are landing on the ground.

Make sure the mats are very powerfully illuminated and are very green. Or blue. Whichever color does not feature prominently in the costuming and makeup.
I’d start offline by carefully researching the movie stunt business. Fall protection devices are regularly removed from practical effects shots but it’s made far simpler by arduously pre-planning the shot.
If you’ve already done the shooting, you are stuck with meticulously rotoscoping every frame or field.
