Cannot Compress Files in FCP for DVD SP

TIGER 10.4.11I recently upgraded to FCP 5 (then 5.1.4) from 4.5; since then, with ANY project, I have not been able to compress the file through Final Cut. I used to be able to go into EXPORT – QUICKTIME CONVERSION, and then I had an option to compress to MPEG-2. And then adjust compression rate, etc.
That option isn’t there anymore; it’s not even like it’s there and greyed out, it’s just not an option.
I’m not familiar with Compressor – so I have been saving the file as a full res Quicktime/self-contained FCP file and importing into DVD SP 4.
Twice now, though, two separate DVD projects have been freezing. It’s not a playback problem. . .when I go back in and open that self-contained FCP Quicktime file, the problem has TWICE now been in the compression of those files. The video itself locks because of a major glitch in the middle of the file.
What I am saying is, the file is corrupted before it even gets into DVD SP 4. (And interestingly, I guess no error message about this in DVD SP)
So. . .1) how could that FCP Quicktime File get corrupted? and, b) the real question, why can I no longer compress in Quicktime Conversion? And why do I suspect that, for some reason, both problems are tied together?
Please check my specs as listed above. Am I where I should be?
(Cannot go back to FCP 4.5, old hard drive crashed and had to start anew)
