Sometimes… I have several projects open. I go to a project and want to capture footage. The capture bin is ghosted out and I get an error that a project needs to be open to capture but in fact one is open? Do I need to have ONLY ONE project open in FCP to capture?

No but you do need to set which project file or bin you want to capture to… right click on a bin or on the name column of the project file, and select it to be the “logging” bin… see if that doesn’t clear up your problem.
