How do I take a clip, start at 100% speed and then slow it down to a freeze frame? I tried the speed remap tools but it only takes a clip down to 1%. Also, if I drag the keyframe halves very far apart the clip just disappears from the timeline.

Ramp down using the time remapping effect. At the frame that you want to freeze, use the razor tool to cut the clip in two. Right-click the second clip, select Frame Hold… and choose | Hold On | In Point | OK |. Change the duration of the frozen frame by adjusting the length of the second clip in the timeline.
