generally with image bufffer errors, you’ll want to decrease the max ram cache in the memory & cache preferences. the default is 60%, dropping that to 40% should help reduce the image buffer errors (essentially you’re sacrificing some ram cache for a larger image buffer).
but i’m surprised you haven’t encountered more problems running ae7 on an intel-mac… here’s a thread you may want to checkout that discusses ways to get ae7 to work better on intel-macs:

the main problem with ae7 and intel macs is that ae has to run under rosetta (apple’s powerpc emulator) which can drastically restrict ram available to ae. the above thread discusses setting changes within ae to get it to work better running under rosetta.
note also that if you upgrade to cs3 or better, you’ll have an intel native version of ae and will see far fewer problems… (i don’t work for adobe, i’m just a graphics guy who struggled with ae7 on a mac pro for nearly a year and i found it well worth it to upgrade to cs3).
