Page 167 of the manual should help you get things sorted out.

“Accordingly, there is a Colorspace setting in the
Master Project Settings panel of the Project Settings (in the Video Monitoring section).”

OK, kind of found the settings in Project Settings->Master Project Settings. I am going to post a more specific question separately.
