Malcom, I wonder if the card that is used to drive the displays is really used at maximum. If I am to guess, a plain GTX750 would provide the same 4 display capability.
Just for curiosity, if you run GPU-Z while working on the project, what is the GPU load and Video Engine load for the card that drives the monitors?

A RAID0 area from 2 HDD is a much better option.
I am using the intel ICH10R embedded in my motherboard and if fairly fast – but it takes a fast CPU to maximize the performance, since is host-based. -

That Fermi card is good choice, a must for MainConcept encoders to work. I have a GTX480 modded in Quadro 6000.

GT630M is not supported by MainConcept:

Also, delete all those k-like and shark codecs… they are just confusing Vegas.
I would uninstall the ‘free’ codecs and re-install Vegas to be sure that correct codecs are in place. -

Your GT 720 is based on Kepler.Look on eBay for a Fermi generation card. I am using now a GTX480 modded in Quadro 6000, have used previously a Quadro 600 and Quadro 2000 with success, I think that a GTS450-GTX480 should work too.

Malcom, my PC is a Dell T3500 with a six-core, 12 threads processor. It’s CPU is a LGA1366 Xeon X5650 (on the same X58/ICH10R chipset) – those CPU are pretty cheap on eBay. You can go all the way up to X5690 (higher frequency, higher price).
Basically they are the Extreme versions of your i7, and it seems that they work perfectly on your board:
