I would check out this article: https://indesignsecrets.com/topic/how-to-convert-pantone-color-swatches-to-cmyk-to-make-print-ready-pdf. It seems as if it is going to take some work. Using the Ink Manager would be the best bet. You can tell the Ink Manger to convert spot colors to process colors at the time of output (it won’t change the actual color swatch definitions in you document). It also gives you some control over how the colors will be converted. This article: https://www.claudiamccue.com/2008/08/speaking-of-ink-manager/ should help with how to use the Ink Manger. Someone probably knows a better solution.

Don’t re-size in Photoshop. If you make the photos smaller you’re destroying information. You’re okay re-sizing them in InDesign. You might want to consider using Adobe Photoshop Lightroom to do this sort of thing in the future. As the name suggest it works really well with Photoshop.

The PSD should work if you have a transparent background. Did you try a PNG?
