  encoding multiple streams/dvd burning

  I do some consulting of sorts, and one of my clients–an indoor skydiving tunnel, needs a system constructed to quickly capture video from up to 3 cameras positioned in the wind tunnel at a time….encode and store it on hard drives (for their records) and then also be able to automatically serve a stream of video to one or more dvd recorders at a time (if a customer chooses to purchase their experience on dvd).

  So basically:

  3 video cameras—>simultaneously encoded digitally—>selected streams sent to DVD duplicator/recorder (need to be able to record one or several dvds from said stream).

  I am completely stumped. Assuming that our budget is realistic (let’s say, if we can find an iron-clad, no-fault solution to this: $10,000 – $13,000)….what the HELL should I be researching for components?

  Any ideas welcomed!
