How can I stop loosing quality??

I’ve got a little problem…
I have got an “old” movie on dvd which I would like to edit.
I have converted this VOB file with “any video converter 2.6.5” to an AVI wich after effects and premiere both accept. The avi is 640×480 25frames/sec and the quality is still acceptable when I view this avi in windows media player.
In after effect i have add an layer with black bars on top and the bottom of the movie so it gets an 16:9 look. These bars give me the opportunity to remove some camera shakes in the y-direction, without having to scale the movie up or something.
I also have done some colour correction with auto colour.O.k. now my problem.. When I export the movie to a new avi it looses some detail quality. the new movie is also 640×480 and 25 frames/sec but some area’s in the movie are getting an ugly blocking look like is t a very low quality jpeg or something..
I have also rendered the movie to an avi.. But this gives the same detail reduction..Is there somebody who is familiar with this problem?? And knows something how to keep the detail in the movie??
