How can I achieve this effect?
I’m struggling to get something similar to this:

I’ve tried using textures and spline wrap but I can’t seem to find the solution. Any advice would be super appreciated!

That’s very helpful, thank you! Do you know how can I adjust the texture rotation/position and avoid the tile? I can’t seem to make it move.

There’s a Tile button in the material tags attributes (about half way down). Just unclick that to get one and only one copy of the texture. Then you can just animate one of the offsets. Make sure your object has a UV tag.
