After Effects CS3 is dramatically optimized for multiple cores/processors. Provided you have enough RAM (1 GB per core at least), it will launch an independent background process for each chore, and feed simultaneous frames to each one of them. As has been made evident in benchmarks all over the web, AE CS3 is among the applications which take the most juice out of multiprocessor configurations.
PS CS3 and AI CS3 are *partially* optimized for multiprocessing. There’s a very interesting blog entry by PS engineer Scott Byer on why the nature of Photoshop doesn’t allow such dramatic levels of multi-core optimizations as AE or 3D apps.
