1st time system restore Any advice greatly appreciated
We have a G5 system used as a dedicated edit suite. It has been three years of steady audio & video running through the system and we have had 12-14 kernel panics during the past 16 months. We think we need to assess our RAM and hard drives to determine if there is any faulty hardware. If OK the plan is to re format and re install O/S and applications Final Cut Studio 2. We then will load our Final Cut Studio project files so they are accessible and working. It is our first time doing this on our system.
Is there any advice, instructions or information that anyone feels may be helpful to this process?

Just be sure to completely backup any installers, your project files and anything else you won’t be able to restore once you wipe the drive.
As for the software, re-install everything from the original discs.
Install the OS, run Software Update multiple times until there is absolutely nothing left to download.
Install Final Cut Studio, again run Software Update multiple times until there is nothing left to download.
Do the same with all your software.
One thing I do with software installs is launch each piece of software as it is installed to ensure it works.

Backup your custom FCP preferences, keyboard layouts, plugins, etc. Similarly copy all your custom settings for Motion, DVD Studio Pro, Soundtrack and Compressor settings. They’re located in the Library:Application Support folder on hour root drive and in the user:Library:Preferences:Final Cut Pro User Data. Look around for custom settings and folders from your other applications as well. This will save quite a bit of time after the new install. I just went through this migrating to a new Mac Pro two weeks ago and yesterday when the it refused to boot up.

Just to add to the wise advise of Walter and Lee, after each installation, run Repair Permissions.
When you have finished all your installing run DiskWarrior or TechTools.
I find out that after a clean installing you have some 30% of items out of order on the directories.
MacOX is unable to fully optimize it self. Is up to you to make your system run smooth. Avoid slow downs, crashes and Kernell panics.
