Date taken(recorded) field?
I’ve just edited some old .avi files together. I wish to include the date of which the first of them was recorded and have it saved, whatever I do with the files at a later date. For instance I know if I copy a jpeg file to another location the “date created” date is changed so surely I don’t want to use the field for that video file, do I?
If it was a .jpeg I would use the “date taken” field but I can’t seem to find one. Date taken is persistent whatever I do with a jpeg(move, copy, edit etc) So I was looking for the equivalent in my video file. Exporting in .H264.

The file created time stamp is created by your computer’s file system which means it has the possibility to change when transferring files online, between hard drives, between systems, and so on.
Your best bet is, if the file type you choose can handle it (h.264 means nothing in this instance) then you can use a metadata tag to add a date (You can use Premiere, Bridge, or other tools). These are not lockable fields usually.
