  Can anyone assist me with a cheat sheet or link on encoding all types of video, high quality and low? thanks.

  It can’t be done. There are too many choices, and it is more an art than a science. There is no cheat sheet. Pick a format and experiment. Your footage might look fine in one format and no in another. It really depends on the amount of movement (changes from one frame to another).
