Do I jut export each audio soundtrack seperately in Premiere? SO I have one video file and two audio files? Then how do I setup each up and link them in Encore? Do I have to setup two timelines?

Encore support multiple languages…there is a drop down menu at the left end of Encore’s audio track designating what language. Just drag two audio clips (one at a time) into the audio track.

How can I setup a 2nd menu for users to select which audio track they want and then link the selection to the right soundtrack? Such as…

Main Menu –> Select Soundtrack Menu –> Link to right soundtrack

    ?

Using the Help files, it looks like a button link drop down menu (Properties) can be set to “Specify Other” which brings up a dialog box to change the language or subtitle tracks…there is a bit more to it so I suggest read the Help files.
