  Is there an easier way to convert 5.1 tracks into stereo or mono tracks, without going the “export to wav” -> audition -> save as wav way?

  You can add a 5.1 track to a stereo or mono sequence, and when you export, the master rack will determine the output. If you mean you want to separate the different channels, the Audition is your best bet.
