Converting vision to cartoon/sketch style look
I have seen this technique used in a couple of videos floating round from some high profile organisations (adidas and ESPN) and was wondering how its done or the process/technique involved

Probably frame by frame painting. They likely just took a video clip, and painted over every frame to match the video, then just removed the video.

I agree with George about this specific case.
For some simpler versions of related “cartoon” looks, you can try the Cartoon effect built into After Effects, as well as ToonIt from Red Giant.
