Audition is great multitrack recording and mastering software and has low latency with any ASIO mixer or interface that connects via USB or Firewire to your computer (Mac or PC). The interface is the main limit in how many separate channels can be recorded simultaneously. Computer power also plays a part. Actually any quality DAW should do what you want.
Mics are dependent on your circumstances. Combination’s of boom mics, lapel mics and shotgun mics with each captured to a separate channel of audio are a starting point depending on what and how you want to capture the audio. If you are capturing video too, I’d use an NLE to capture video and multitracks of audio at the same time.
