No sure about the right terminology here so bear with me. I’ve drawn a mask but none of the points have handle bars so that I can adjust curves. Is there a way to convert an existing point? No handle bars to handle bars? Thanks

With Pen tool selected, hold down Alt/Option. Your cursor will change to a little crooked “V” shape. Click and drag.

With the Move tool selected, hold down Ctl-Alt/Command-Option.

It is easier to destroy than to create.
    More fun, too.

Sounds like you drew the mask with Rotobezier checked.

Select the mask and from the Layer Menu select Mask Shape and Path and uncheck Rotobezier.

The direction handles will return to your mask.
