When shooting S-Log with F3 to a recorder like a gemini, what is the process in camera of setting it up correctly?

I assume in the recorder you set it up for S-Log and the format you want to shoot, but what do you need to do to the F3 in order to send the image to the recorder? I know it travels through HD-SDI but what menu elements need to be selected?

Also when shooting to the card at the same time, the camera shoots one format to the card while the recorder is encoding a different format. Correct? I assume thats the case since F3 to SxS can’t record the same level of quality as it can to a recorder. So if your shooting to both at the same time and your setting different parameters to each, do you run the risk of the recorder recording the same quality as the SxS?
