Have you tried outputting to h.264? I don’t know what your material looks like or how high the quality needs to be – but I’ve found that 3-6 Mbps gives me small file sizes with reasonable quality. On the rare occasion that I need higher quality, 8-12 Mbps usually does the trick.

Wow, that’s a blast from the past! AFAIK the newest version of Nvidia’s Quadro 5xxxx card is the Quadro RTX 5000. However, I’m not an expert on Nvidia’s product lines, so (hopefully) someone will correct me if I’m wrong.

Personally, I would pick up a Blackmagic 4k or used 6k. The Panasonic and Sony cameras in this price range are fantastic, but their respective capture formats aren’t as robust or easy to edit as Blackmagic raw and Prores.
